My favorite Crock Pot recipe--Lime Chicken

The phones have been ringing off the hook for the crockpot recipe I talked about on today's show...so here you go:

1 package bone-in chicken breasts (the actual recipe calls for thighs, but I think dark meat is gross.)
2 tsp garlic (I use the garlic from a jar, who has time to actually peel and crush one?)
1/4 cup lime juice, today I actually squeezed 2 real limes, but most of the time I just use lime juice. (can use lemon also)
1/2 tsp Thyme leaves
1 1/2 cups Chicken Broth
2 Tbls. butter
1/2 tsp pepper

Throw it in a crock pot and 10 minutes before dinner, throw some rice (1 cup maybe?) of instant rice into the broth, which will soak up the broth and lime juice...and voila! A perfect crock pot meal.

So, now I'd like to hear from you...leave your favorite Crock Pot recipes in the comment section or email them to ceci@jq99.com...I'll pass em along on the air.

I love to cook with the crock pot, here is one of my favorites...

Vegetable Beef Soup
1 64oz of spicy hot V8 juice
1 lb. of stew meat
1 envelope onion soup mix
1 tsp Italian seasoning
3 potatoes, cubed
1 pkg frozen mixed veg. (a pea/carrot/corn type mix)
---------
Throw it all in the pot at low and as Ron Popeil says, "set it and forget it"

Thyme is hard to find in the store. I looked for a very long time. Finally, I had an old lady help me, and she found it.

Here is one of my favorite crock pot recipes. It is delicious, and it's also super-easy!

4 boneless skinless chicken breast halves
1 can (10 3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup (8 ounces) sour cream
4 bacon strips, cooked and crumbled (I use either pre-cooked bacon, or sprinkle Tastefully Simple's Bacon Bacon over the chicken)

Place chicen in a slow cooker. Combine soup and sour cream; pour over chicken. Cover and cook on low 4-5 hours or until chicken is tender. Sprinkle with bacon.

How many breasts did you use? Just wondering as I think I need to double for a family of five.

Sounds awesome!

I used 3 large chicken breasts. Plenty for 2 adults, 2 kids and some left over for lunch the next day. I can't wait to try the rest of these crock pots...they all sound so good.
