Well, I had to skip church yesterday to get this dip made for the big Chargers game yesterday. Remember when I forgot? I looked at the recipe 10 minutes before I left for church, so I could run to the store and pick up what I needed after church, and noticed it said that it needed to "sit" for 5 or 6 hours. That meant if I skipped church, it would ready just in time for half time! I told Dave to let me know honestly if he liked it or not. I said if you tell me you like it and you really don't, I'll make it from now until we're old...and you'll have to eat it and pretend to like it. The dip got 2 thumbs up though. From him at least, not from my friend Matt, who doesn't like guacamole (or Ranch dressing for that matter...how weird!)
Here's the recipe (from what I remember)
Use 3 ripe avocado's, put into a blender with 2 Tablespoons lemon juice and a teaspoon of salt. (I added some garlic salt too.)
Put this as the first layer.
For the second layer use a can of bean dip.
Then mix 8oz of sour cream with a packet of taco dip.
Use that for the 3rd layer.
Then put a whole pound of sharp cheddar cheese on top of that.
Then add green onions and tomatoes and black olives if you like...
AND LET IT SIT FOR 5 OR 6 HOURS!

No! Seriously, I really liked the dip (the half without the onions). I have decided I must actually like guacamole. The hand shredded cheese was awesome! Beans - good! Sour cream - good! "Hint of Lime" chips - priceless! I'd eat again (the non-onion side!).

I think your friend matt is "just saying" that he likes it. I wouldn't believe a word! He sounds too wishy washy about the guacamole too. I'd even question his motives as a true friend. How well do you really know this strange "non-onion eater"? Drop him! I'm just kidding. He's probably sorta normal.
